It's a new year and if you haven't already compiled a list of resolutions this is the time to do it! Among those new habits you will try to establish should be the goal of healthy eating.  And, there is no better way to eat healthy than to control what you eat.  So, this year make an effort to eat fresh ingredients at home and at the same time gather your family at the dinner table.  You'll be glad you did.  

Here's a good recipe to get you started.  Quick and easy to prepare.  Lots of protein and vegetables. And, tt's also easy to to decrease the fat content by using non-fat chicken broth and omitting the cheese and avacado.

Chicken Tortilla Soup

Servings:  6-8   Time:  40 mins

 

Ingredients

1 onions, chopped

2 garlic cloves, minced

1 tablespoon olive oil

2 tablespoons taco seasoning

1 (28 ounce) cans crushed tomatoes

2 (10 1/2 ounce) cans chicken broth

1 cup corn kernels, cooked

1 (4 ounce) cans chopped green chili peppers

1 (15 ounce) cans black beans, rinsed and drained

1/4 cup chopped fresh cilantro

1 rotisserie chicken, torn into bite-sized pieces

crushed tortilla chips

sliced avocados

shredded monterey jack cheese

Directions

1.     In a medium stock pot, heat oil over medium heat.

2.     Saute onion and garlic in oil until soft.

3.     Stir in taco seasoning, tomatoes (with juices), and broth.

4.     Bring to a boil, and simmer for 5 to 10 minutes.

5.     Stir in corn, chiles, beans, and chicken.

6.     Simmer for 10 minutes.

7.     Ladle soup into individual serving bowls, and top with cilantro, crushed tortilla chips, avocado slices and cheese.

Best Meatloaf Ever


Most families rely on simple 'go to' recipes to get through the meal time process.  Here is one of those tried and true meals that most come back to time and again.  

Meatloaf is a staple meal in our house.  It's inexpensive to make, pairs well with potatoes and many green vegetables and does really well as leftovers.  But this is no plain old meatloaf.  Unlike most, this meatloaf is ingredibly moist and really flavorful.  So, go ahead, double the recipe and make 2 loaves.  Eat one tonight and freeze the other for later.  

Ingredients

Meatloaf:

1 cup Bread Crumbs

1 1/2 pounds Ground Beef

3/4 cup (heaping) Freshly Grated Parmesan Cheese

1/2 teaspoon Seasoned Salt

1 teaspoon Kosher Salt

1 teaspoon Worchestershire

1 teaspoon Olive Oil

½ teaspoon Course Ground Pepper

⅓ cups Minced Flat-leaf Parsley

3 whole Eggs Beaten

10 slices  Bacon

Sauce:

3/4 cup Ketchup

2 T Brown Sugar

½ t  Dry Mustard

Tabasco To Taste

Directions:

1.     Preheat oven to 375 degrees.

2.     Combine all meatloaf ingredients except the bacon slices in a bowl with your hands. 

3.     Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain.

4.     Lay bacon slices over the top of the loaf, tucking them underneath the meatloaf.

5.     Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together, pour over the top of the bacon. Spread with a spoon.

6.     Bake for about 45 minutes.
