You could choose a soup or maybe a chili. But, why not think a little out of the ordinary? Try this shrimp and cannellini bean dish. CRISPY BAKED SHRIMP WITH CANNELLINI BEANS

Servings: 4     Time: 20 minutes

Ingredients

  • 1 cup panko
  • 1/4 cup parmesan cheese
  • 3 tablespoons olive oil
  • 1 lb peeled and deveined medium shrimp
  • 1 garlic clove, chopped
  • 1 (19 oz) can cannellini beans, rinsed
  • 2 cups spinach, torn
  • 1/2 cup red bell peppers, chopped

  6. Meanwhile, heat the remaining oil in a medium skillet over medium-high heat.
  7. Add the garlic and cook, stirring, for 30 seconds.
  8. Add the beans, ¼ cup water, spinach and bell peppers.
  9. Cook until heated through, 2-3 minutes.
  10. Remove from heat and toss with the spinach.
  11. Serve the beans with the shrimp and sprinkle any remaining crumbs over the top.
